Keren! Mahasiswa UNS Solo Manfaatkan Jambu Mete Jadi Abon
Solopos.com, SOLO – Sejumlah mahasiswa Fakultas Pertanian (FP) Universitas Sebelas Maret (UNS) Solo membuat sebuah penelitian. Penelitian itu menghasilkan pemanfaatan jambu mete menjadi abon.
Mereka adalah Alfian Khamal Mustafa, Muhammad Aziz Nurdiyanto, Riyadhul Badi’ah, Suci Ayu Rohayati, dan Uswatun Hasanah. Mereka tergerak membuat penelitian terkait jambu mete karena melihat fenomena buah tersebut belum dimanfaatkan secara maksimal oleh masyarakat.
“Banyaknya jambu mete yang terbuang atau jatuh di sekitar pohonnya. Padahal, limbah jambu mete memiliki potensi yang besar pada industri makanan tetapi kurang dimanfaatkan secara optimal karena rasanya yang sepet dan bikin gatal di mulut,” ujar Alfian, beberapa waktu lalu.
Menurutnya, buah semu jambu mete apabila diolah secara baik dan tepat dapat menghasilkan produk makanan seperti manisan, abon, sirup, dan masih banyak lagi.
Penelitian bertema Abon Jambu Mete Sebagai Pemanfaatan Sisa Jambu Mete Bernilai Ekonomis Untuk Petani ini mempelajari proses pengolahan buah semu jambu mete yang tidak termanfaatkan. Pengolahan buah semu jambu mete ini juga sebagai upaya zero waste.
Pengolahan jambu mete dimulai dari mempersiapkan jambu mete lalu memotongnya menjadi beberapa bagian. Potongan jambu mete direndam menggunakan air yang sudah diberi garam dan metabisulfit selama 15 menit untuk mengurangi rasa sepet. Selanjutnya jambu mete dihancurkan.
Bumbu
Sementara itu bumbu-bumbu yang digunakan untuk membuat abon adalah cabai, gula, garam, bawang putih, dan bawang merah yang dihancurkan. Bumbu kemudian ditumis bersama jambu mete hingga kesat dan kering seperti abon daging pada umumnya.
Setelah proses memasak selesai, abon jambu mete dikemas menggunakan toples dan siap dipasarkan. “Alasan kami menggunakan toples yaitu supaya barang yang kami berikan kepada konsumen dapat digunakan kembali untuk kebutuhan yang lain, tidak hanya sekali pakai sehingga akan meminimalisasi pertambahan jumlah sampah akibat produk kami,” terang Alfian.
Produk abon jambu mete ini akan dipasarkan dengan varian rasa manis orisinal dan pedas. Harga jualnya Rp 20.000 per kemasan 100 gram. Pemasaran abon dilakukan secara daring dengan sistem open preorder.
“Pada media sosial Instagram, pemasaran dilakukan melalui paid promote. Sedangkan pada WhatsApp pemasaran abon jambu mete dilaksanakan dengan membagikan pesan. Sistem pembayarannya bisa dapat melalui transfer ke rekening bank maupun COD [cash on delivery] di sekitar kampus UNS Kentingan,” ujar Alfian.
